Mandarin orange spinach

Ingredients: 6 cups torn triple-washed spinach, 2 cups lettuce (any type and combination of lettuce is good), 1 can mandarin oranges (drain and save juice), 4 tablespoons balsamic vinegar, 1 tablespoon Dijon mustard, pepper, salt.

Directions:

1. In a large bowl, mix spinach, lettuce, and mandarin oranges.
2. In a small bowl, whisk vinegar and orange juice into the mustard. Add salt and pepper. Pour over spinach mixture.
