Oven-baked french fries
Makes 4 servings
Ingredients: 4 large baking potatoes or sweet potatoes, 4 tsp. vegetable oil (canola preferred), salt, cooking spray.
Directions: 1. Preheat oven to 450°.
2. Cut peeled potatoes lengthwise into ½ inch strips. Soak in cold water for 15 minutes or longer. Drain and pat dry with paper towels.
3. Toss potato strips in oil in a plastic bag.
4. Place potatoes on a nonstick baking pan sprayed with cooking spray in a single layer.
5. Bake at 450° for approximately 20 minutes. Turn the potatoes and cook an additional 20 minutes for even crispness.
Note: For sweet potatoes
1. Bake at 400° for 25 minutes or until done.
2. Sprinkle with salt or, if on a low- salt diet, use Mr. Dash or Mrs. Dash for flavor.
