Flower Pasta Power

Makes 2 servings

Ingredients: 1 head of cauliflower, 1 tablespoons olive oil, 1 garlic clove, ¾ cup chicken or vegetable broth, ⅓ cup chopped Italian parsley, salt and pepper, whole wheat pasta (4 ounces dry).

Easy Modification:

  1. Gluten free: Use a Gluten Free Pasta.

Directions: 1. Chop cauliflower in small pieces (can use "rice cauliflower" which is just cauliflower cut up into small pieces that resemble rice)

2. Heat oil in skillet add chopped garlic. Sauté till brown. Add cauliflower on low heat sauté cauliflower till brown. Add chicken broth, parsley, salt and pepper. Cover simmer till cauliflower is soft.

3. Boil whole wheat pasta (4 ounces dry) according to package directions. Drain pasta (retain ½ cup cooking water) add to cauliflower mixture in pan and sauté another 5 minutes adding small amount of cooking water to make sure pasta is coated with cauliflower sauce. Then enjoy!!
