Sure to Please Pasta and Peas

Makes 4 servings

Ingredients: 1 tablespoon olive oil, 1 onion, diced, 1 large glove garlic, 8 ripe plum tomatoes, chopped, 1 small head of escarole torn into large pieces, 1/2 cup broccoli, 1/2 cup shredded carrots, 1 can peas,¼ chopped fresh Italian parsley (flat variety), ¼ cup fresh basil leaves torn in small pieces, not chopped, 1 cup chicken or vegetable broth (may use low-salt variety), ½ lb. pasta, penne, or shells, cooked, salt & pepper, grated cheese.

Easy Modifications:

  1. Gluten free: Use a gluten free pasta.


1. In a large frying pan, heat olive oil and sauté onion and garlic until soft.
2. Add chopped tomatoes and sauté until soft.
3. Add escarole, broccoli, carrots, and sauté until soft. Turn mixture into a large saucepan.
4. Add the peas with the remaining spices and herbs.
5. Add the broth and cook for approximately 20 minutes until all the flavors blend.
6. Add cooked pasta and serve. May sprinkle with grated cheese. 7. Serve with a green salad.
